Go to your Groups window. Select the group you wish to edit. Choose Info to open the group info window.

Click the Members and Roles tab. Highlight the role you want to edit.

Below the list of roles is an area for Role Name and Role Title. The Title is what will appear above a group member's name above their head, when that group and that role is active.

Note that you can also rename the role's name, or even create new roles.

One caution: Don't give anyone else, except your own alt, the Owner role. Once someone is a group Owner, they cannot be removed from the group or the Owner role, unless they do it themselves, voluntarily.

"Everyone" is the default.  It's like "None of the Above".  It's the role that a group member gets unless you assign them to a different role. You can't get rid of it because then there would be no "None of the Above" role.  Of course, you don't have to ever use that role....

Also note that a member may have more than one assigned role. For example, a group owner may switch his active role from Owner to Everyone, and his visible tag would then say "Member", not "Owner"...even though he is still, of course, the owner.
