You don't, but you can wear a mesh avatar to cover your classic one.  With a classic avatar, you can use the Appearance sliders to adjust the avatar's shape and you can apply a new skin and attachments.  You can't change its basic structure -- that is, the mesh that is its basis --- into a different basic structure, another mesh.

You do not convert your avatar into anything. The classic avatar never stops existing as the necessary base of your presence in Second Life. A mesh body (or a whole mesh avatar) just covers the classic body and hides it from peaking out with an alpha layer. If you want a mesh avatar or mesh body, simply go shopping and then wear all its components. But make sure to try a lot of demos before and be sure you acutally have things compatible with your new body.
