Question

I'm opening my first rp sim with my fiancé and we are trying to parcel off houses and set prim limits

Ok so we know how to parcel fine and we know how to set limits with the object bonus in the region details,
But when we set limits we find that all the parcels get the same limits

Example: one parcel needed 600 prims the one beside it needed 800
We set the 800 one to 800 and went to set the 600 one
We went back to the 800 one had it was changed to 600

How do we set prim limits on dif parcels with dif limits without it all changing to the same thing?
Thanks in advance,

You don't.  The bonus applies to all parcels in the sim.  Personally, I avoid using the bonus for that reason.  It's more of a headache than a help.  If you really want to give parcels different prim allowances than they are entitled to for their land area, it can make more sense to keep them under the same group and let them share whatever prim excess is in unrented parcels informally. Some landowners do that by using a prim counter feature in their rental boxes and then monitoring it fairly religiously to be sure that tenants stay within their limits.  I have rented shops at several places in SL under those terms, and I do that now with rental parcels on the sim where I live. I have never had a tenant abuse the system, but I could always evict one if I ever had to.
