Can we have more than one partner? At the same time?

I wish to have multiple partners, at the same time. Will SL allow this ?
If so how does the partnerships display on my profile?

No. You can only have one partner. But nothings keeps you from adding a few lines to your profile.

It's all part of the "game". You're not legal partners anywhere except in SL, so you can call yourself anything you want.  You can only have one person listed on your profile page as an "I paid L$10" partner, but you can name as many other people as you like in your profile description.  You can also agree to all use similar Display Names so that it's apparent to anyone around you that the three (or four, or five ..) of you belong together.
