How to reset all enviornment sky settings to one overall setting.

I need to set all environment settings to sun (or midday or 12:00 PM), but have tried everything I could find (SKY setting changes, Quick Pref. changes), to no avail.   I take off in my seaplane from Hollywood Airport and almost immediately fly into a sim that is set on midnight!   I can't see to fly in a midnight setting.   Help!     How do I fix the settings to midday so that every sim I fly over (near the Blake Sea) remains set for me on a midday setting?

I presume you are using Firestorm viewer, as you mention Quick Prefs.

In the top menu bar of the viewer, go to Avatar -> Preferences -> Firestorm -> Windlight.

Here you control if region or parcel windlight is applied automatically on entry.

If you want your own local windlight setting to always be used, you must untick "Automatically change environment to use region/parcel settings" and untick "Use Firestorm parcel windlight sharing".
