A waterslide usually works by having you sit on a transparent prim at the top of the slide which then turns physical and simply follows gravity down to the bottom, where you are unseated.  It can throw you to one side if the slide is poorly constructed, so that the transparent prim can get over the high sides of the slide, or if the slide is set up on a tilt, so that the prim isn't going quite the right direction as it heads down. There's really no magic to the script itself.  All it does is those two tricks: turn physical and then unseat you when the ride ends.  There's nothing in it that can toss you to the side.
