For menu commands, one must put the 1st letters of sub's name as prefix. How does one do that, if sub has single name? Example, Jane Doe would be jdkneel. What if she is named just Jane?

You can change the prefix, I think.  So assuming it defaults to jr (for Jane Resident) you can then change it to something else, simply by saying "jrprefix jane" and then say "jane nadu" if you want.

When she puts it on for the first time, I think it should tell her what default prefix it's set.

yes, primary level owners (or maybe just the physical owner of the collar, I'm not 100% certain on that) can change the prefix, as well as the control channel.
