How do I prevent individuals in my Contacts list from seeing when I am online? I've tried unchecking the boxes under the 'Eye' icon but the next time I log on, they are checked again.

Are you using the latest version of V2? There is a bug about granting permissions on the friends list.The solution seems to unfriend them and befriend them again to reset the permissions. Anyway, it won't hurt you clear your cache and relog.

It seems to have been fixed in V2.8 beta so you might give it a try, or use a TPV untill it is fixed in 2.7.5.

Beside that: You can't really hide your online status. Your profile will show no status to your friends so they know you're hiding your status from them. And a simple IM or LSL script will reveal your current status to everybody.
