ehm.. well.. spoken chat goes only to the ones near you, or to the one you have in personal voice chat.

Typed convo is stored at your machine, if you enabled that, ánd all others in chat range.

it's very likely your chat is stored on their machines too.

Privat IM is stored at your and your IM partner's machine

( to see where, look in your preferences, the location is set there)

Also LL has the ability to keep chatlogs from anywhere and all time.

Since you used the word "speak", I assume that you mean that you are using Voice.  In that case, the answer is that it is heard by anyone within range, but is not recorded anywhere (although it is possible for anyone to record whatever sounds he hears, using third party software).  Unlike typed chat and IMs, voice conversations are not logged on your computer or by Linden Lab.  That's one of the many reasons why I never use voice, BTW.  You can't ever go back to review what went on in a meeting or a converation where people discussed and agreed upon things to do.

Typed chat and IMs are logged by Linden Lab, in case they need to investigate an Abuse Report.  You cannot delete those logs.

If you, or the people you're speaking to, have enabled chat or IM logging, a copy is saved to your (or their) hard drives.  You can delete your own logs; search for a folder called (sl username)\chatlog.  You can't delete anyone else's logs, of course.
