I want to know if a specific someone checking my profile and how often. Is there any way to do this?

You do not even need to be in SL to view a profile.

https://my.secondlife.com/<avatar.name>  will take you to anyone's profile. Use the .LastName if they have one, otherwise .Resident is assumed.

An empty profile doesn't necessarily mean there is nothing to tell, i just don't like to share it with the whole universe.

Otherwise, no.  Can't be done.
