they already are mesh, what are you trying to do? with the base Riku there is a "Bonus Items" box, this includes UV maps and some helper textures, you can save these and use them to customize the skin and plates.

this avatar has many surfaces that can be hard to reach if you are wearing it. rez it on the floor to make applying textures easier.

if you only want to change the colors, you can use tinting inside SL. right-click and edit each body part, tick "select face" in the SL editor, click on each armor panel, and you can change the color in the texture tab.

if you want to really customize with different patterns or shading (and tinting looks better if you do it this way too), you would open each of those textures from the bonus items box, save them, put them together in your favorite image editor, then re-upload the results. to use as replacement textures. you would use the same edit interface to drop on your replacement textures.

Photoshop is great if it's already around for you to use, but GIMP is a fine free alternative. you can google for Second Life mesh builder kit tutorials, that's basically what you have with those bonus textures.
