In firestorm, in your preferences there is an option to pose while in edit appearance. I don't remember if it's on the main tab as you open it, or under move and view. But uncheck the 'add lighting' and 'pose' options, and you can adjust your shape without it affecting whatever you're doing.

In Firestorm (and possibly other viewers), you're able to turn off the default animation that usually plays when editing your shape, thus doing what you ask here.  In Preferences/Move and View/View, under where it says, "Automatically pose avatar during (select one or more)," uncheck "Appearance."  You might want to uncheck, "Add Additional Lighting" as well.

The latest rlv viewer has the hover slider (altitude offset) on the menu bar just like FS did before ssa broke it. Don`t think it prevents sinking in the ground bug but it`s easier to adjust hover on the fly without having to edit shape.

Don`t know if it`s on any other viewer though, well I know it`s not on fs or sl viewer

That`s Restrained Love Viewer....google it

That's a standard feature of the official viewer:

As such it should be easy to find in every viewer.
