You can try Trim but most solutions will require you to log on one way or another. That means that you will appear on-line while you use it, You'll probably appear at "home".

One trick is to use e-mail. For that someone has to send you an IM while you are off-line. You will receive that IM in your e-mail and you can reply using e-mail to that message. It is only possible to reply to an IM for a limited time, I think it was two days and after that the reply will bounce.

There are also mobile phone apps. I use Sparkle for the iPhone. You log into SL from your phone and have IM and chat functions. You can choose where to login at so you can use local chat as well as IM.
