Yes, if your computer is not secure and the person has either RL access or remote access via a Trojan, otherwise no. I'm not sure why anyone would bother clearing chat history though. First, the person would need to know its location in AppData and I think would rather read it than delete it.

ETA: Just saw your comment in Permalinks. It would be impossible to delete just one person's chat history by accident. You have to deliberately access C > Users > AppData > Local > SecondLife > [avatar_name] (as in Windows 7, other OS may be slightly different route) and then delete the chat text file for that person. I think you would remember that so if you are absolutely sure this has happened, I suggest you run a scan with the free version of Malwarebytes:
