Wow, that's a HUGE topic!

For some good in-world tutorials, visit The Ivory Tower of Primitives.  Builder's Brewery, NCI, and Caledon Oxbridge University offer some classes in building and texturing.

The newest way to create content for Second Life is by building Mesh.  This is not done in SL, but in a third party 3D modeling program.  These tend to be like Photoshop -- expensive, and extremely feature-rich, with a learning curve all their own.  If you already own one, like Maya or LightWave3D, great.  But Blender is free, and there are lots of tutorials for it on the web.
